Varietal: Cabernet Franc

Appassimento: 52% with 125 days drying time

Bottle Size: 750 mL & 1.5 L Magnum

Alcohol:  14.9%

Aromas:  Sweet, rich aromas of cherry compote, black currant, ripe black cherry, dried fig, cigar tobacco, dark chocolate, dark roast coffee, baking spices, and smoky oak notes.

Palate:  Elegant, rich, and intense flavours of dried fig and cherry, layered with fresh ripe fruit flavours of black cherry, black currant, and mission figs.  On the very full mid palate the spice, dark chocolate, and velvety smooth tannins come to your attention and the finish lingers forever revealing a multitude of subtle nuances for you to discover.  There is fantastic balance between the fruit, tannins, acidity, and oak.

Food pairings:  May we suggest serving this wine alongside roasted or grilled red meats, especially wild game such as venison, elk, bison, and wild boar, as well as lamb, osso buco or prime rib.  It is also an elegant accompaniment to cured meat and fine hard cheeses or enjoy on its own after time in the decanter.

Cellaring:  This wine will age in the cellar easily for 5-10+ years and is drinking very well now.  For the patient collector, and under proper conditions, the 1.5L magnum format allows for much slower aging.
