Dream 2015: Enticing aromas and on the palate this bold wine shows off flavours of black cherry, fresh blackberry preserve, fresh black fig, and slight oak on the finish. The big flavours of this wine are well balanced, complex, and the tannins are luxuriously smooth.
A blend of Cabernet Sauvignon (60%), Cabernet Franc (27%), Merlot (11%), and Petit Verdot (2%), the grapes were small batch processed and fermented. The wine was aged for 16 months in select French, American, and Hungarian oak barrels and the final blend is made up of 15% appassimento wine (15% of the juice coming from grapes that were dried after picking). Decant this wine if enjoying now or cellar for an additional 5-8 years.
Pinot Noir 2013: On the nose are intense dried fruit compote notes followed by aromas of ripe red cherry, raspberry, black fig, leather and plum. On the palate – fresh, ripe black fig, red cherry, brandied plums, and baking spice. A great balance of fruit, acidity, oak and silky smooth tannins with a long, elegant finish. Enjoy this wine now.
All grapes were hand harvested and sorted. Small batch fermentations were pressed and aged for 20 months on lees in select French oak barrels before being blended for bottling.
Cabernet Sauvignon 2015: A powerful wine from a lovely vintage. The palate is firm yet elegant with smooth tannins and flavours of ripe black currant, dried cherry, kirsch, fig, vanilla, subtle oak, and tobacco leading to a long, spicy finish.
The grapes were hand-harvested with 20% set aside to dry using the traditional appassimento method before pressing. The resulting wine was then aged in French and American oak for 18 months.
Enjoy now from a decanter, perhaps by the fireplace, or let mature for 5-10 years.
Temptress 2015: This Temptress 2015 is a blend of Cabernet Franc, Cabernet Sauvignon, Malbec, Merlot, and Petit Verdot. The wine was aged for 18 months in French, and American oak barrels before being blended with 25% appassimento wine (grapes were left to dry after being picked). The aging potential for this vintage is conservatively estimated at 5-10 years.
Lots of power and complexity on the nose with big ripe black cherry, black currant, vanilla/oak, subtle smoke and spice notes with faint violet floral aromas. This is a huge wine with lots of complexity, well balanced with lots of big ripe flavours of black cherry, dark plum, blueberry and black currants with leather, spices and vanilla/oak on its long finish.
Petit Verdot 2015: For the serious red wine lover!
After harvest, bunches of grapes were placed on racks to naturally dry for 60 days. This added process allows some of the water to evaporate, producing a more dense, concentrated juice. The grapes were then crushed and fermented. A small amount of Cabernet Franc was added to give the wine added depth and body. This wine is 15% appassimento and aged in French oak barrels (40% new barrels) for18 months.
One swirl of the wine in your glass will release the layers of concentrated ripe black fruit, eucalyptus, violet, and faint fennel and cinnamon notes. The palate is full-bodied, rich, smooth with flavours of currants, cherry compote, baking spice, and vanilla bean highlights leading to a deliciously long finish.
To be enjoyed now or will age easily for 5-7+ years in your cellar… with incredible will power.
Apologetic Red 2015: A favourite at the winery, this 100% Cabernet Franc was made in the appassimento style with 52% of the grapes dried for 125 days prior to pressing.
A huge wine with smooth tannins and intense flavours of ripe red cherry, currants, and spices such as clove, leading to an extremely long and complex finish. The balance and powerful elegance of this wine will astound you. This wine will age in the cellar easily for 5-8+ years and is drinking very well now.
Apologetic Red is a humorous nod to Canadians and their apologetic nature. Called Apologetic with “Sorry” written on the front label and “Not Sorry” written on the back label, it was created with the idea that Canadians should stop apologizing and instead celebrate the excellence that abounds in this country.
