Tasting Notes
Intensely fruity and juicy on the nose, this Merlot captures raspberry, plum, cherry cola and spice notes. The palate shows black cherry, olive, vanilla and cocoa flavours with a definite appassimento influence that gives the impression of sweetness but finishes dry. Exceptional weight and substance combine with supple and soft tannins creating a smooth texture leading to a long, lingering finish.

Winemaker Notes
The grapes were hand harvested and sorted in October with 40% of the grapes set aside to dry in the appassimento method. After fermentation, the wine was then aged in French oak for 18 months.

Wine and Food Pairing
Pairs well with grilled lamb or pork chops, gourmet burgers, grilled Italian sausage, and steak in a red wine sauce.
