Tasting notes
This Merlot dominant Bordeaux blend has a ripe, fruit forward profile. With aromas of dark fruit and spice on the nose. The palate has flavours of blackberry, dark plum, black cherry, currants, vanilla bean, and hints of leather. A balanced wine with good acidity, smooth elegant tannins and integrated subtle oak. The finish is very long allowing the complexity of the blend reveal itself. Drinking nicely now especially after time in a decanter. The Dream 2017 will continue to evolve in your cellar through to the year 2027.
Food pairing
Serve this wine with a selection of charcuterie and aged cheeses, well marbled cuts like prime rib, ribeye, or porterhouse steak, game meats, grilled mushrooms, roasted vegetables, barbeque Ribs, stews and hearty autumn soups.
Winemaker notes
The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. The grapes were harvested, with a portion set aside to dry for 125 days in the traditional Appassimento method. The wine was fermented and aged separately for 16 months in French and American oak barrels before final blending.
