Tasting Notes
Named in honour of our Founder Marisa Crispino. With aromas of ripe peach, apricot, honey, tropical fruit and ripe citrus. The palate is rich, sweet and fresh all at once with flavours of white peach and apricot, ripe mango and mandarin orange. Luxurious sweetness with a delightful acidity.
Winemaking Notes
Two years (2013 & 2014) of harsh winters resulted in a slightly reduced harvest for the 2015 vintage. What fruit did come off the vines was full flavoured with crisp acidity. Our Estate Vineyard Riesling was handpicked then set aside to dry for 90 days. After gentle pressing this wine was fermented in stainless steel then further aged on its lees before being prepared for bottling. The fermentation process is halted to allow for lower alcohol and residual sugar, this technique within Appassimento winemaking is called Recioto and is known in Italy as a dessert style wine. This wine is drinking beautifully now, but will continue to evolve in your cellar through to the year 2025.
Food Pairings
Serve this wine chilled as an aperitif with foie gras or duck liver pate, and premium blue cheeses. If serving with dessert, a lemon meringue pie, baked Alaska, or New York style cheesecake will work nicely.
