Tasting notes
This Merlot dominant Bordeaux blend has a ripe, fruit forward profile. Aromas of black cherry, plum, blueberry, blackcurrant and subtle vanilla bean are layered on the nose. The palate has a juicy tannin structure with ripe and rich flavours to echo the aromas. Lots of complexity and a lengthy, elegant finish.
Food pairing
Serve this wine with a selection of charcuterie and aged cheeses, lasagna, osso bucco, BBQ fare and chateaubriand, it also works nicely with wild mushroom risotto and Moroccan tagine.
Winemaker notes
The 2016 vintage was hot and sunny, the vines produced fruit with very ripe flavours and lower acidity – a great Niagara vintage! The grapes were harvested, with a portion set aside to dry for 100 days in the traditional appassimento method. The wine was fermented and aged separately for 16 months in French, American and Hungarian oak barrels before final blending. Drinking nicely now especially after a lengthy decant. The Dream 2016 will continue to evolve in your cellar through to the year 2026.
