The 2020 vintage began with mild winter conditions followed by an early and ideal spring. The growing season was hot, dry, and long resulting in fruit that came in clean and ripe. The perfect season for our Winemaker, René Van Ede's inaugural vintage! The individual varietal portions of this blend were all hand-harvested, sorted, destemmed/crushed separately. A portion of the Gamay and Chardonnay were set aside to dry in the Appassimento method with the intention of using the grape skins to create this Ripasso style rosé.
Enjoy this wine with fresh spinach salad topped by strawberries and poppy seed dressing, grilled Halloumi cheese, grilled trout, a nice charcuterie platter including candied salmon and prosciutto, fried calamari with tzatziki, shrimp cocktail, and pan seared tuna steaks.
