The 2004 vintage was temperate which allowed for our estate Cabernet Franc grapes to recover from the previous winter, fully ripen, and retain acidity. The grapes were harvested by hand then dried naturally using the traditional appassimento method for 100 days. The wine was fermented on the skins, pressed, and then aged in select French oak barrels for 24 months. This wine is at its best now - aged but very enjoyable!
This wine has matured extremely well, serve with osso bucco, charcuterie and cheese, mushroom risotto, grilled veal, lamb, or dark chocolate.
