The 2005 vintage was a warmer year after a very cold winter resulting in a smaller crop, but very good quality grapes. The grapes were hand harvested, then set aside to dry naturally in the traditional appassimento method for 100 days. The wine was fermented on the skins, pressed, then aged in select French oak barrels for 22 months. This wine is at its best now - aged but very enjoyable!
This wine is meant to savour alongside multiple courses. Pair alongside aged cheeses and compotes to start. For a main course serve veal parmigiana or wild mushroom risotto with truffle. Finish with a dark chocolate dessert, or a fine cigar.
