The 2006 vintage was a dry warm year which allowed for full ripening of our estate Cabernet Franc grapes. An excellent Niagara vintage! The grapes were harvested in late October then dried in the traditional appassimento method for 100 days. The wine fermented on the grape skins, was pressed, then aged in select French oak barrels for 24 months. Drinking beautifully now, this wine will continue to age through to the year 2021.
This wine is meant to savour alongside multiple courses. Pair alongside rich cheeses, compotes and charcuterie to start. For a main course serve roasted game tenderloins or hearty risotto. Finish with a rich dark chocolate dessert, or a fine cigar.
