Our flagship wine hand-crafted from the first vines ever planted at our Crispino Estate Vineyard.
On the nose are layers of marzipan and spice with a back drop of sour cherry, cocoa, coffee and leather notes. The palate has depth and intensity with flavours of dried red cherry, brandied-chocolate, subtle oak and spice, leading to an extremely long, velvety finish.
The 2007 vintage was a dry warm year which allowed for full ripening our estate Cabernet Franc grapes. An excellent Niagara vintage!
The grapes were harvested in late October then dried naturally using the traditional appassimento method for 103 days. This wine was fermented on the skins, pressed, then aged in select French oak barrels for 24 months.
Drinking beautifully now, this wine will continue to age through to the year 2022.
This wine is meant to savour alongside multiple courses. Pair alongside a selection of charcuterie and aged cheeses to start. For a main course serve any slow roasted or hearty dishes. Finish with a rich dark chocolate dessert, or a fine cigar.
