The 2008 vintage cooler which allowed the grapes to retain a nice acidity and firm tannin structure. The grapes were harvested in early November then dried naturally using the traditional appassimento for 102 days. The wine was fermented on the skins, pressed, and then aged in select French oak barrels for 23 months. This wine is at its best now - aged but very enjoyable! It will continue to cellar through to the year 2020.
This wine is meant to savour alongside multiple courses. Pair with a selection of charcuterie and aged cheeses to start. For your main course osso bucco, veal parmigiana, Italian Bolognese or mushroom risotto. Finish with a dark chocolate dessert, or a fine cigar.
