Our flagship wine from the first vines ever planted at our Estate Vineyard. Aromas of dried black cherry, dried mission figs, leather, tobacco, toasted oak, dark chocolate and coffee. The palate is smooth, intense, and balanced with elegant flavours of dried cherry compote, figs, vanilla bean, dark chocolate, coffee, and smoky oak.
The 2010 vintage was a dry warm year which allowed for full ripening of our estate Cabernet Franc grapes. An excellent Niagara vintage! The grapes were harvested in mid-October then dried naturally using the traditional appassimento method for 100 days. This wine fermented on the skins, was pressed, and then aged in select French oak barrels for 27 months. Drinking beautifully now but this wine will continue to develop in your cellar through to the year 2025.
This wine is meant to savour alongside multiple courses. Pair with a selection of charcuterie and aged cheeses to start. For your main course; slow roasted or grilled meats like lamb, venison or beef pair nicely especially with roasted vegetables and creamy gratins. Finish with a dark chocolate dessert, or a fine cigar.
