The 2012 vintage was exceptional, our estate Cabernet Franc grapes ripened to unprecedented levels. The grapes were harvested in early October then dried naturally using the traditional appassimento method for 100 days. The wine was fermented on the skins, pressed, and then aged in select French oak barrels for 28 months. Drinking beautifully now after a lengthy decant, however this wine will truly benefit from further time in the cellar - it will continue to age well through to the year 2027.
This wine is meant to savour alongside multiple courses. Pair with a cured meat and aged cheese selection to start. For your main course serve with roasted leg of lamb, rosemary grilled veal, ribeye steaks, or venison. Finish with a dark chocolate dessert, or a fine cigar.
