Our flagship wine hand-crafted from the first vines ever planted at our Crispino Estate Vineyard.
On the nose this wine has layers of sweet black figs, dates, raisin pie, dark coffee, caramel, and spiced Christmas puddings. The palate is intense with elegant tannin structure and flavours of dried black fig, cherry compote, dried currant, baked pastries and spices, rich caramel and coffee. This wine has an extremely long elegant finish with notes of toasted oak and baking spices.
Limited Edition. Only two barrels of this wine were produced.
Two years (2013 & 2014) of harsh winters resulted in a slightly reduced harvest for the 2015 vintage. The grapes were smaller in size giving a higher skin to juice ratio. This produced a wine with deep colour and complex flavours.
The grapes were harvested in early October then set aside to dry naturally for 60 days in the traditional appassimento method. The wine was fermented on the skins, pressed, and then aged for 18 months – half in French and the other half in American oak.
Drinking beautifully now after a lengthy decant, however this wine will truly benefit from further time in the cellar - it will continue to age well through to the year 2030.
This wine is meant to savour alongside multiple courses. Pair with a selection of blue and aged cheeses to start. For your main course serve with chateaubriand, steak Dianne, osso bucco and leg or rack of lamb. Finish with pecan pie, or a fine cigar.
