Our flagship wine hand-crafted from the first vines ever planted at our Crispino Estate Vineyard. Aromas of dried cherry, fresh figs, caramel, vanilla bean, fruit compote, cigar tobacco and spice. The palate is bold with elegant balance and complexity. Lots of dried fruit flavours, fig, coffee and subtle caramel. Elegant tannins lead to a long warm finish.
The 2016 vintage was hot and sunny, the vines produced fruit with very ripe flavours and lower acidity – a great Niagara vintage! The grapes were harvested in early October then set aside to dry naturally for 100 days in the traditional appassimento method. The wine was fermented on the skins, pressed, and then aged for 18 months in select French oak. Drinking beautifully now after a lengthy decant, however this wine will truly benefit from further time in the cellar - it will continue to age well through to the year 2031.
This wine is meant to savour alongside multiple courses. Pair with a selection of blue and aged cheeses with charcuterie to start. For your main course serve with prime rib topped by peppercorn sauce with roasted vegetables. For dessert serve alongside dark chocolate or enjoy with a fine cigar.
