Two years (2013 & 2014) of harsh winters resulted in a slightly reduced harvest for the 2015 vintage. The grapes were smaller in size giving a higher skin to juice ratio. This produced a wine with deep colour and complex flavours. The grapes were harvested in late October with a portion (20%) set aside to dry in the traditional appassimento method for 45 days. The wine was fermented on the skins, pressed, and then aged for 18 months in French and American oak. Enjoy now after a lengthy decant, or continue to cellar through to the year 2025.
Grilled red meats are a perfect pairing for this bold red. Lean cuts like tenderloin, T-bone and NY Striploin especially. Beef bourguignon, osso bucco, tourtierre and lasagna are all dishes that pair nicely.
