The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. The Cabernet Sauvignon grapes were harvested on November 21st. The drying period was 100 days, and after pressing the wine was aged for 18 months in French and American oak barrels. This bold Cabernet Sauvignon has a very powerful palate - enjoy now after allowing to decant, or continue to cellar through to the year 2027.

With aromas of ripe black cherry, blackberry, rich mocha, dark chocolate, and hints of vanilla bean and leather. The palate has
voluptuous flavours of dark fruit and chocolate to match the nose with a long and lingering finish.
Serve this wine with blue and firm cheeses, charcuterie, rich mushroom manicotti, barbeque ribs, brisket, beef roasts, venison steaks, and hearty stews.
