Tasting Notes

A small lot wine with just 145 cases made. The nose holds vibrant red fruit aromas of strawberry preserves, cranberries, cherries, and ruby red grapefruit. The palate is bright and refreshing with flavours to match the nose. An excellent summer sipper with an elegant mouthfeel and a long finish. While this wine is intended to be enjoyed young to take full advantage of the lively fruit flavours, it could also age up to 3 years if desired.

Winemaking Notes

The 2020 vintage began with mild winter conditions followed by an early and ideal spring. The growing season was hot, dry, and long resulting in fruit that came in clean and ripe. The perfect season for our Winemaker, René Van Ede's inaugural vintage! The Cabernet Sauvignon was harvested from the Crispino Estate Vineyard on November 5th. After 24 hours of skin contact the team bled off approximately 1000L of free run juice to then be fermented separately off skins. This 'saignée' method results in a bolder, darker rosé wine! After a month long ferment the wine was blended with our Appassimento Sauvignon Blanc (12%) giving the wine an elegant mouthfeel and finish.

Food Pairings

Enjoy this wine with grapefruit and shrimp ceviche, beef tartare with shoestring frites and garlic aioli, a charcuterie platter with blue, Comte and aged goat cheese, thin crust wood-fired pizzas, a fresh fruit salad, or on its own under the sun.
