The 2017 vintage was a cooler year, with a warm trend just before harvest allowing the grapes to fully ripen. The grapes were harvested in early October with a portion set aside to dry for 45 days in the traditional appassimento method. The wine was fermented on the skins, pressed, and then aged for 9 months in select French oak barrels. Enjoy now through to the year 2022.
Serve this wine with just a slight chill to achieve balance between the oak and fruit flavours. Pair with dishes such as corn on the cob, lobster, grilled vegetables, roast chicken, mushroom risotto, seared scallops and stuffed pork tenderloin.
