Tasting Notes

With aromas of grilled pineapple, lemon peel, honeysuckle, wet stone and soft vanilla. The palate is elegant and balanced with flavours of fresh pineapple, pear, lemon custard and Ontario wildflower honey, all leading to a long complex finish. Drinking beautifully now, this wine will continue to evolve well through to the year 2024.

Winemaking Notes

The 2019 vintage saw warm and humid conditions throughout the summer resulting in the need for extra care and investment measures in the vineyard. Harvest was later than usual, but the fruit was healthy, flavourful and ripe. The grapes were harvested in early October with a portion set aside to dry for 1 month in the traditional Appassimento method for added depth and complexity. With fermentation and age taking place in French oak barrels for 9 months. 

Food Pairings

Serve this wine with just a slight chill to achieve balance between the oak and fruit flavours. Pair with dishes such as roasted chicken, cedar plank salmon, grilled rainbow trout with charred lemon, bacon wrapped scallops, creamy lobster mac and cheese, steamed mussels, or pear and arugula salad.
