Named in honour of early friends and supporters who helped harvest and sort grapes from our first vintage and came to be known as the ‘Conspiracy Council’. With aromas of dark cherry, blackcurrant, plum, blackberry, fresh raspberry, cola, eucalyptus, anise and hints of cigar tobacco. The palate has rich and complex flavours of red and dark fruit to match the nose, with balanced acidity, smooth tannins and a long finish.
Winemaking Notes
The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. A Ripasso style wine of Bordeaux grape varieties. The grapes were harvested, fermented, and aged separately before final blending. The wine is then selected to be repassed over the skins and lees of our Appassimento red grapes giving the wine added depth and flavour. This Conspiracy was aged in French, American, and Hungarian oak barrels for 10 months. Drinking beautifully now, this wine will continue to age well in your cellar through to the year 2027.
Food Pairings
Serve this wine with dishes such as grilled burgers and steaks, BBQ ribs, brisket, wood-fired margherita pizza, spaghetti Bolognese, chili, and mushroom ravioli. The Conspiracy is a crowd pleasing red with food pairing versatility making it a great get-together wine.
