Aromas of dried fig, dried cherry, mocha, dark chocolate, and subtle vanilla and butter toffee notes. The palate is powerful but elegant with flavours of dried cherry, blueberry, figs, and currants together with dark chocolate, toffee and mocha. A wine with integrated tannins and an impressive finish. Enjoy now after a lengthy decant, or continue to cellar through to the year 2025.

The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. This wine is a blend of our Appassimento Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot grapes which were hand-harvested throughout November then set aside to dry naturally for 125 days. This wine fermented on the skins, was pressed, and then aged in select French and American oak barrels for 18 months.
This wine pairs naturally with blue cheese and cured meats, stuffed mushrooms, red meat dishes such as filet mignon, chateaubriand or Cajun-spiced rib eye.
