The 2018 vintage benefited from a very hot summer, leading to ripe fruit with complex flavours. This wine is a blend of our Appassimento Cabernet Franc, Merlot and Petit Verdot grapes which were hand-harvested mid October through mid November then set aside to dry naturally for 70 days. This wine fermented on the skins, pressed, and then aged in select French and American oak barrels for 18 months.
This wine pairs very well with a selection of blue and aged cheese alongside rich charcuterie, smoked brisket, beef Bourguignon, roasted beet salad with candied walnuts, wild mushroom risotto, and rich dark chocolate desserts.
