The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. The Cabernet Franc grapes were hand-harvested mid November. The drying period was 125 days, and after pressing the wine was aged for the18 months in French oak. With only 4 barrels made.
This wine is meant to savour alongside multiple courses. Pair with a selection of blue and aged cheese with charcuterie to start. For your main course serve with Filet mignon or truffle risotto followed by a dessert of rich dark chocolate, or enjoy with a fine cigar.
