Nose: Baking spice, ripe strawberries, Morello cherries, dark plums, mulberries, sweet vanilla bean, cola nut, marzipan, sarsaparilla, blackberry. Tasting Notes: Blackberry jam, vanilla bean, black currant, baking spice, Sichuan pepper, dark plums, Mulberry, candied ginger, leather. Drinking beautifully now, this wine will continue to age well in your cellar through to the year 2026.
||The grapes were harvested in November and were then ‘cold-soaked’ and allowed to warm up for 3 days. Once warmed, they were fermented and barreled down to a selection of new and neutral barrels. Merlot block were very small berries and thus ripened earlier. After drying this also meant that there was a high skin to pulp ratio. The appassimento portion was barreled down to a 3 barrel batch, which included new oak barrels.
||Baseball steak with grilled buttery lobster, osso bucco, rack of lamb with rosemary, Prime rib with fresh horseradish and roasted fingerling potatoes, chocolate souffle with raspberry coulis, sautéed morelles with creamy, parmesan risotto, flatbread with caramelized red onions and wild mushrooms, pecorino, aged ash chevre, 10 yr. old crystallized cheddar.
