Tasting Notes
With rich aromas of blackberry jam, black cherry, violets, fresh black currant, and hints of toasted oak. The palate has bold flavours of blackberry compote, fresh cherry pie and baking spices, with structured tannins and a lengthy, complex finish. The wine is drinking beautifully, and powerfully now, especially after time in a decanter. It will benefit from time in the cellar and age gracefully through to the year 2027.
Winemaking Notes
The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen.
The best barrels of our estate grown Petit Verdot were reserved for this wine. The appassimento portion of this wine came from 1 barrel each of Cabernet Franc and Petit Verdot derived from grapes that had dried for a of 125 days before being pressed. The wine was aged in French and American oak barrels for 18 months.
Food Pairings
This wine pairs particularly well with Filet mignon, New York striploin, venison, blue and aged cheese, charcuterie, smoked beef brisket, mushroom risotto, and roasted lamb.
