The 2019 vintage saw warm and humid conditions throughout the summer resulting in the need for extra care and investment measures in the vineyard. Harvest was later than usual, but the fruit was healthy, flavourful and ripe. The Sauvignon Blanc grapes were harvested throughout October according to optimal ripeness, with a portion (11%) being set aside to dry for 64 days in the Appassimento method. The wine was fermented and aged in stainless steel.
