The 2018 vintage benefited from a very hot summer, leading to ripe fruit with complex flavours. The Syrah was hand-harvested late October and small batch fermented before being pressed into both French and American (30% new) oak barrels for 16 months. The Syrah was then blended with 20% Cabernet Sauvignon, and 20% Appassimento Cabernet Sauvignon for added richness and complexity. The drying period on the Appassimento Cabernet Sauvignon was 81 days.
Enjoy this wine with dishes such as hard and aged cheese with charcuterie, prosciutto wrapped figs, peppercorn crusted steak, barbecue spare ribs, lasagna, mushroom ravioli, and ratatouille.
