Tasting Notes
This wine has a powerful bouquet with aromas of ripe black cherry, blackberry, cassis, blackcurrant, vanilla bean, leather, cigar tobacco, sandalwood, mocha and dried plum. The palate is bold and elegant with flavours of ripe cherry, plum, blackberry preserve, black pepper and dried currants.
Winemaking Notes
The 2016 vintage was hot and sunny, the vines produced fruit with very ripe flavours and lower acidity – a great Niagara vintage! The grapes were harvested in mid October to late November, with a portion set aside to dry for 100 days. After pressing and fermentation the wine was aged in French and American oak barrels for 20 months. The best barrels from our individual vineyard blocks are chosen for the Temptress blend. This wine is tasting exceedingly well now, but will continue to evolve in your cellar through to the year 2026.
Food Pairings
Pair this wine with roasted lamb, NY Striploin, or porterhouse steaks, prime rib, smoked duck breast, mushroom ravioli, blue and aged cheeses with charcuterie, and dark chocolate desserts.
