The 2018 vintage benefited from a very hot summer, leading to ripe fruit with complex flavours. The grapes were harvested in late September (Sauvignon Blanc) and early October (Viognier) with a portion set aside to dry for 1 month in the traditional appassimento method for added depth and complexity. With fermentation and age taking place in stainless steel to retain the fresh fruit flavours and aromas. Drinking beautifully now, this wine will continue at its best through to the year 2022.
Serve this wine with fresh oysters, seared sea bass or scallops, shrimp off the BBQ, calamari, spinach artichoke dip, quinoa salad, or fried halloumi cheese.
