The 2018 vintage benefited from a very hot summer, leading to ripe fruit with complex flavours. The Cabernet Sauvignon grapes were harvested late October, with a portion (25%) set aside to dry for 104 days in the traditional Appassimento method. The wine was fermented and aged for 12 months in American oak barrels, then transferred to Pike Creek whisky barrels for an additional 5 months.
