Cabernet Franc 35% ● Cabernet Sauvignon 30% ● Merlot 20%
● Petit Verdot 10% ● Malbec 5%
The 2016 vintage was hot and sunny, the vines produced fruit with ripe flavours and lower acidity, a great Niagara vintage! The grapes were harvested mid October to mid November with a portion (25%) set aside to dry for 100 days in the appassimento method. The wine was then aged 20 months in French and American oak barrels.
Our premium Bordeaux blend, the Temptress has aromas of ripe black cherry, blackberry, cassis, blackcurrants, leather, cigar tobaco, mocha and dried plum. The palate has bold, elegant flavours of ripe cherry, plum, blackberry preserve, black pepper and dried currants. With elevated but in-balance layers of acidity, tannin, and warmth.
Wine and Food Pairing:
Pair the 2016 Temptress with roasted lamb, NY striploin, prime rib, smoked duck breat, mushroom ravioli, blue and aged cheese with charcuterie, and finish your meal with a dark chocolate dessert.
