Tasting notes
With aromas of ripe black cherry, blackberry, fresh blackcurrant, slight eucalyptus and leather on the nose. The palate has a firm tannin structure and nice acidity which showcases the flavours of bing cherry, blackberry preserve, black fig, spice and slight oak notes.
Food pairing
Serve this wine with grilled red meats, BBQ ribs, grilled portobello mushroom, firm cheeses and charcuterie or by itself.
Winemaker notes
Two years (2013 & 2014) of harsh winters resulted in a slightly reduced harvest for the 2015 vintage. The grapes were smaller in size giving a higher skin to juice ratio. This produced a wine with deep colour and complex flavours. The grapes were harvested, with a portion set aside to dry for 60 days in the traditional appassimento method. The wine was fermented and aged separately for 16 months in French, American and Hungarian oak barrels before final blending. Enjoy now after a lengthy decant, the Dream 2015 will continue to evolve in your cellar through to the year 2025.
