With aromas of fresh ripe cherry, raspberry, coffee, fresh dates and leather. The palate has rich flavours of cherry, dried figs, and spicy coffee together with subtle oak notes on the long finish. Exceedingly balanced, with harmonious acidity and luxurious tannins.
This wine pairs perfectly with charcuterie, firm and blue cheeses, filet mignon, NY strip, chateaubriand, prime rib roast, Moroccan style couscous or pilaf, mushroom risotto, and dark chocolate.
The 2017 vintage was cooler than average, a warm trend just before harvest allowed for the grapes to fully ripen. A portion of the harvest was set aside to dry for 125 days before being pressed.This wine then spent 16 months maturing in French oak barrels. The 2017 Apologetic Red will continue to cellar through to the year 2027.
